Chicken Biryani is one the famous dish in Indian cuisine. Biryani is a symbol of a country that takes differences and divergences and makes them into One India. There are So many varieties of biryani and It differs from State to state. Varieties are: Hyderabadi Biryani, Mughal Biryani, Sindhi Biryani, Bombay Biryani, Lucknowi biryani, Kacchi Biryani and more. Biryani is a word comes from Persian word “Birian” which means ‘fried before cooking’. In below recipe you can also use Fish, Prawn, Mutton, Egg(boiled egg), which non-veg you love instead of Chicken.
Chicken Biryani
Ingredients:
- 1 kg Chicken large pieces with bones
- 700 gm Basmati Rice
- 5 Onions
- 2tbp ginger garlic paste
- 4 Tomatoes
- 6 green chilli
- 1 cup Coriander leaves chopped
- 1 cup mint leaves chopped
- 1 cup curd/plain yogurt
- 5 tbsp ready made Biryani Masala
- 4 Green cardamom and cloves
- 2 pieces cinnamon
- Salt, Oil
Methods:
- Heat 6tbsp oil in a heavy bottom pan and add 4 green cardamom, 4 Cloves, 2 cinnamon.
- Add Sliced Onion.
- Cook for around 10 minutes till the onions are light brown
- Add ginger garlic paste and cook for 2 minutes.
- Add Chicken pieces, mix well cook for 2-3 minutes.
- Add ready made Biryani masala and mix well. Now add Sliced tomatoes and cook for 3-4 minutes. Now add curd mix well.
- Add coriander and mint leaves mix well. Cook for 10 minutes.
- Add washed Rice and water (700gm rice 2.5 liter water) cook for 20-25 minutes. Serve Hot.
Biryani Masala
Homemade Biriyani Masala.
Ingredients:
- 4-5 dried kashmiri red chillies
- 3 star anise, 3tbsp coriander seeds
- 1 piece cinnamon, 2 black cardamom pods
- 10 green cardamom pods, 2tbsp black peppercorns
- 1/2 piece nutmeg, 1 whole mace
- 3 bay leaves, 1tbsp cumin seeds
- 2 tsp fennel seeds 1 tsp clove
- 2tsp caraway seeds, 1/2 tsp turmeric powder.
Method:
- Heat a pan on medium flame. Add Dried red chillies, bay leaves, coriander seeds, star anise, cinnamon and mix well. Then add black cardamom pods, green cardamom pods, Black Peppercorns, nutmeg, mace and stir well on medium flame. Add cumin seeds, fennel seeds, cloves, and caraway seeds.
- Stir well until it smells aromatic and don't fry too much. Then add turmeric powder and stir well and get the pan out of the heat and cool it.
- Then grind all the mix into a grinder and make a powder.
- Store it in a airtight jar and store it in the refrigerator or in a dark place.
